New Zealand does not turn every meal into a percentage puzzle, but a public holiday can add a clearly signposted extra line.

New Zealand's hospitality bill has three ideas that visitors often mix together. GST is the national consumption tax built into most everyday goods and services. A public-holiday surcharge helps a business cover the higher cost of opening on that day. A tip is a voluntary thank-you. Reading those as separate layers makes the final total much easier to understand.

The quick answer Tipping is not obligatory in New Zealand, including at restaurants and bars. Reward genuinely good service if you wish, but there is no standard percentage to add automatically. GST is 15% on most goods and services and consumer prices normally make any GST exclusion clear. A café or restaurant may disclose a public-holiday surcharge, often up to 15%; that surcharge is not a tip.

A holiday surcharge is a calendar clue

Businesses can face higher wage and operating costs on public holidays, so cafés and restaurants sometimes add a clearly advertised percentage. Look at the entrance, counter and menu before ordering. If the charge was not disclosed, ask for an explanation rather than treating it as an expected gratuity.

The terminal prompt does not create a custom

A payment screen may offer suggested tip buttons because the software is used internationally. The presence of the buttons does not change New Zealand's local expectation. Select no tip without embarrassment, or choose an amount when the service genuinely made the experience better.

Tours and personal service leave room for discretion

A guide, driver or hotel employee does not require a routine percentage. For exceptional personal help, a modest cash tip or thoughtful direct thank-you is welcome. First check whether a tour package already describes gratuities or service inclusions.

The advertised price should tell an honest story

GST is 15% on most goods and services. Consumer-facing prices are generally presented with GST included; if it is excluded, that should be made clear. Confirm the full price when booking accommodation, activities or business-oriented services where the display may be structured differently.
